Chlorogenic acid (CGA) is a natural antioxidant, also known as Eucommia chlorogenic acid, which is a polyphenol compound. Apples, grapes, tomatoes, blueberries and other fruits contain chlorogenic acid, but the highest content is in coffee beans, so it is also called coffee polyphenols.
Chlorogenic acid is a key component of coffee aroma. The chemical reaction produced by roasting changes the color of coffee beans and releases unique aroma and flavor. However, the heat resistance of chlorogenic acid is low, and more than 40 kinds of chlorogenic acid are easily destroyed due to the high temperature of the roasting process; therefore, green coffee retains as much chlorogenic acid as possible through low-temperature and shallow roasting.
