Continue cooking for ten minutes, then turn off the heat and let cool naturally, take out, wash and dry. This step is to fill the surface of the vessel with tiny holes with the starch of the rice water to avoid residual odor or staining. ■ Please note that the temperature difference between hot and cold should not be too large when using it.
