In 1925, the Indian Assam tea tree variety was introduced to Taiwan and planted in Sun Moon Lake, Nantou. Assam black tea was sent to the international tea auction market as "Formosa Black Tea". It is considered to have the aroma of 2,000 to 3,000 meters above sea level. Sun Moon Lake black tea's extremely high level of performance also created a historic page for Taiwanese black tea.
Crossing the complicated and rugged path, we planted the Assam (Taiwan Tea No. 8) tea tree on the small hilly land of Sun Moon Lake, and this location happened to be surrounded by nearby mountains. Growing by itself in such a primitive and natural place, without too much intervention in the management, Assam completely absorbs the nutrients of the soil. Hidden under the dark red tea soup, there is a richer and more fragrant caramel and malt aroma, which is different from Sun Moon Lake. Ruby (Taiwan Tea No. 18) is elegant and sweet. It is a carefully selected Assam black tea with mellow and unrestrained characteristics, adding a passion of nature. No wonder it is a classic of Sun Moon Lake black tea.

【Hot Soak】
Amount of tea: The ratio of tea to water is 3.5:100 (3.5g of tea with 100cc of water)
Brewing temperature: water temperature 95℃
Brewing time: 1'15" for the first brew, 1'30" for the second brew, 1'50" for the third brew, add 20 seconds for each subsequent brew
【Cold brew】
The amount of tea: the ratio of tea to water is 2:100 (2g of tea with 100cc of water)
Brewing temperature: room temperature cold water
Brewing time: 3 hours at room temperature; 6 hours at refrigerated state
【iced】
Amount of tea leaves: 10g tea leaves and 400cc water
Brewing temperature: water temperature 100℃
Brewing time: After soaking for 4'00", add ice cubes and it's done.
Note: The intensity of hot brewing and cold brewing can be adjusted according to personal preference by adjusting the amount of tea leaves or time.
